Two textures are both honest hash browns: A single cake, flipped once, crisp on both faces and soft inside. Loose shreds, stirred late, with more browned edges and less of a slab. Choose before you start. You cannot turn a stirred pan into a clean cake after the shreds have broken. You can always break a cake into loose shreds at the end if you change your mind.

The grater is not the hard part. The cloth is. If your hands are still wet after wringing the potato, the pan is about to steam.

What goes wrong in the pan

Crowding is the usual failure. Two layers of potato make a lid. Use two pans or cook in batches. Cold fat is the next failure: shreds sit and soak. The pan should already be hot when the potato lands.

Leftover boiled potato can be chopped and browned, but that is fried potato, not classic shredded hash browns. Leftover baked potato, chilled, shredded, and dried, is closer. Fresh raw shreds are the standard path.

Serve at once. A crust left on a plate in a wet stack goes limp. If you must hold them, keep them in a single layer in a warm oven, not under a lid. A lid is a steam tent.
