How it works

The egg is timing, not garnish: it goes on when the hash already has a crust, because the egg cooks in minutes and the potato does not.

Cooked meat, chopped small enough to mix, not so fine it disappears. Potato, already cooked or given extra time if still raw. Onion, cut so it softens before the crust is ready. Fat that can take heat without smoking the room out.

An egg only at the end, if you want one. Leftovers are the point. Hash exists because yesterday's roast should not be reheated as a dry slab. Chopping it and frying it with potato is a way to spend a morning, not a way to invent a new cut of meat.

Timing the brown

Colour needs contact. Spread the hash, then leave it. Stirring from the first second prevents a crust and turns the pan into warm chopped salad. When the underside holds together, turn it in sections. If it breaks, press it back; hash is allowed to look uneven. What it should not look like is pale and wet.

Heat that is too timid never browns. Heat that is too fierce burns onion before potato is ready. Start medium-hot, listen for a steady fry rather than a scream, and use the first batch as the test. Breakfast service is unforgiving of a second wait, so have the chopped pieces ready before the pan is hot. The cooking is short; the cutting is the longer job.

Hash is yesterday's dinner asked to perform at breakfast. Give it a hot pan and a still minute, or it will only be warm leftovers in a circle.
